Bagged Salad Chicken Salad Pitas {Easy Healthy Lunch}

Back to schooooooooool! Okay can I be honest here? I love love love LOVE my kids. But we are all so ready for school to start again! After having both of them in full time school this last year I decided we all needed a break and that summer would be the perfect time for us all to reconnect and recharge. What I grossly underestimated was how insane this summer would be for us at work with the new studio’s construction and how the few house projects we had planned would balloon into laying a full yard of sod, a full bathroom remodel and major plumbing repairs ha!

We’ve been out of our single bathroom for over 5 weeks at this point and are just reaching the end of the 5 month construction project on our new studio space. But we’ve managed to sneak in a ton of family time and accomplish a ton too which I’m grateful for, but I think next year we will be looking forward to a few less extensive construction projects and a few more camping trips and lazy lake days.

So it’s exciting to us all that school is starting and we can all get back into the routines and get back to enjoying our evenings together. Noah is starting kindergarten (sniff!) and Phin is headed into PreK at an awesome private preschool here.

One thing that has SAVED us this summer is our amazing ClickList team. Fred Meyer’s Simple Truth Organic and Private Selection items make up the bulk of our shopping trips and with our weekly Click List shopping done at the start of the week (without taking our precious weekend time) it’s so easy to pull together amazing lunches with a well stocked pantry!

Let’s get started!

The secret to this lunch is just how dang simple it is. Shred up a Simple Truth organic rotisserie chicken and put it all into a big bowl. Then break open a bagged salad kit. Any of them work great so I mix it up each time and try something different! Today’s was Spinach Cherry Almond Bleu which was delicious. Pop open your salad kit and snag the goodies bag and salad dressing. Toss the goodies into the bowl and a squirt of the salad dressing.

I like a squirt of the dressing to give it a bit of sweetness but you can totally omit it or use all the salad dressing. They tend to have a bit more sugar and fat in them than I like to eat at lunch. So my go to solution is to add in several scoops of plain yogurt and give it a good mix. Salt, pepper and any extra veggies or fruit you want to go in can be added too (we tossed in a few green grapes but chopped apples, sesame seeds, extra nuts etc all work great here so rummage in your pantry for whatever you like!). And you are done!

Pull the veggies out of the salad kit and stuff them in your pita and then top with your chicken salad. If you are feeling a bit heavy and want to skip the bread (or you didn’t use Click List this week and you don’t have any bread in the house 😉 the filling also makes an amazing salad topper too!

Now that we’ve got our pita done it’s time to pack it up! A good lunch box is essential, we found these Rubbermaid LunchBlox containers at our Fred Meyer’s. They are super spiffy! The kids had a lot of fun helping us make these lunches and than snap the containers onto the ice packs. This kit fits in our favorite lunch bags, the PackIt Insulated bags.

We actually bought some of the mini kids versions vs the full size linked last year, and that bag fits these containers perfectly without the ice pack and a little snugly with the ice pack. In theory you shouldn’t have to use ice packs with them (as the whole bag is an ice pack) but in practicality, sometimes mama isn’t unpacking the lunch bag until I’m refilling it in the morning and that means it didn’t make it to the freezer overnight.

So having backup ice packs that fit is a great solution! The full size PackIt’s would be an even better fit with room to spare for a drink too. Speaking of drinks, we are obsessed with the Simple Truth Organic Coconut Water’s. I love that they are grab and go and super hydrating and the kids love the way they taste.

Kroger’s Lemon Lime Seltzer Water has also become my newest obsession this summer. I don’t drink sodas and haven’t for years but was craving something bubbly and hydrating with all the heat. This hits the spot and I can sip on it at work when I’m not really in the mood for anymore plain water.


Blueberries, a good serving of hummus and carrot sticks and a few guilty pleasure dark chocolate biscuits round us out for today (let’s be honest the kiddos only really get one in their pack and mommy hoards the rest in her desk haha).

Ingredients

  • 1 rotisserie chicken meat shredded
  • 1/2-1 cup plain full fat yogurt
  • 1 salad kit
  • 2 pitas warmed and cut in half
  • salt and pepper
  • optional: lemon juice hummus, extra fruit like apples or grapes, seeds or nuts etc

Instructions

  • 1. Toss shredded chicken, yogurt and salad kit goodies bag contents together.2. Stuff pita halves with salad, hummus (optional) and chicken salad. Enjoy!
