Cozy warm baked oatmeal filled with all the spices of a chai latte. Packed with eggs and greek yogurt for the healthy part and then covered in honey and butter to keep it all in balance.

I think I’m in love with breakfast these days. Can we all just embrace this? Maybe it’s the light in the morning or the freshness of a day that feels like it has so much possibility.

We’ve had eggnog french toast and blender crepes and healthy spelt pancakes. I think it’s because Noah loves breakfast and will actually eat for me at this hour of day. Many days he’s actually ravenous and we end up putting Sam from the Hobbit to shame with how many “second breakfasts” and 24th breakfasts we end up with at this house.

By dinner time though he is done eating and is frantic to soak up the fleeting moments of daylight left before the inevitable doom….bed time. One day child you will ache for that bed and find that the sweetest moment in your day is that first sip of coffee and that final moment of laying your head down on the pillow in exhaustion.

Speaking of coffee I’m finally recovered from my detox of the stuff and have been slowly embracing this groggy state I live in every morning. I had so hoped to be able to drink decaf too….yet after just two days I was quickly realizing it was the same effect. Heart pulsing, irritated, panic attack sensations. Not exactly what I need in my life.

So I said goodbye and tried to cuddle up with decaffeinated chai….which turns out is nothing more than corn syrup and tastes almost nothing like it’s caffeinated cousin. In sheer desperation I wandered down the tea isle and my eyes settled upon this…..Celestial Seasonings Bengal Spice tea. It’s amazing! A cup of it brewed up with some half and half or heavy cream at the end is basically heaven in the morning. A milk frother is in my future and a dusting of cinnamon is going to make it all come together.

This was a really long story to tell you that I have a Chai obsession in my life right now and thought we should put it in our oatmeal too. After we dug in we realized that butter and honey were definitely wanted….no needed really. Pop it under the broiler to get all that melted into the perfectly crunchy top.

p.s. I put in a packet of stevia in the oatmeal but you could easily put 2 in there without any trouble if you like things more sweet. Or just put more honey on it. Totally your deal.

Chai Baked Oatmeal

Ingredients

  • 3 cups oatmeal
  • 2 cups nonfat greek yogurt
  • 3 eggs
  • 2 tablespoons maple syrup
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 1 teaspoon baking soda
  • pinch of salt
  • Top with:
  • 4 tablespoons butter
  • Honey or maple syrup
  • Almonds
  • Serving Suggestions:
  • Apple compote fresh fruit, milk or cream

Instructions

  • 1. Combine all ingredients in the baking pan.
    2. Bake for 30-35 minutes.
    3. Top with honey and butter. Broil until butter is melted.
    4. Serve with almonds, milk or cream and more honey (if desired). Also it is delicious with fresh or with baked in fruit or jam.

      From my understanding if you are referring to Celestial Seasonings pesticide reports those were spam from someone who had interest in their stock prices plummeting. But made for an interesting reading session a few days ago haha!
