Pomegranate Goat Cheese Salad with Balsamic Honey Dressing

Ingredients
  • Dressing:
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Pinch of salt and pepper
  • 3-4 cups Tanimura & Antle® Artisan Lettuce™, cut, rinsed and patted dry.
  • Toppings:
  • ½ cup pomegranate seeds
  • ¼ cup crumbled goat cheese
  • ¼ cup slivered almonds
  • 2 orange tomatoes, sliced
  • ¼ cup pepitas
Instructions
  1. Whisk dressing ingredients together. Toss lettuce with dressing and toppings. Serve immediately.
  2. If preparing ahead of time, do not add dressing to salad until serving time.
