Corn Pudding (From Scratch with Fresh Corn)

This easy corn pudding recipe is made with fresh corn. Pantry staples and no refined flours or sugars make it a crowd pleaser!

Ingredients
  • 6 ears fresh corn
  • ½ medium onion, thinly sliced and then chopped
  • 5 tablespoons butter
  • 3 tablespoons honey
  • ½ cup half and half
  • ¼ cup spelt flour (can substitute all purpose flour)
  • 6 eggs
  • 1 teaspoon salt
  • ½ teaspoon pepper
Instructions
  1. Preheat oven at 350 degrees.
  2. Shuck corn and cut kernels off.
  3. Combine all ingredients and pour into a greased 9 x 13 inch pan.
  4. Bake for 1 hour.
