Grilled Artichokes with Pesto Gnocchi

These easy grilled artichokes with pesto gnocchi are gorgeous and so easy to make! Whip some of these up for your next backyard party.

We are saying goodbye (sniff) to summer rapidly here in Oregon. The temperatures have already started rapidly dropping during the night here. Waking up to crisp chilly mornings in August is a quintessential central Oregon tradition. Somehow the blistering heat of the first two weeks of August melts into fall by the end of the month.

I’ve pulled on jeans and sweatshirts multiple days this week (and I’m SO not complaining.) But by 10 am the days are still hot and almost always smoky, from the entire state going up in forest fires. This year has proven itself to be the same, with wafts of smoke slipping through the rustling trees as we grill up the end of summer dinners.

After watching the incredible solar eclipse right from our backyard, we fired up the grill to make a delicious lazy lunch for everyone. Grilled artichokes with pesto gnocchi, a simple salad, watermelon, grilled bread, and a quick & easy peach angel food cake made for a perfect menu. It was the best way to celebrate such an incredible day!

We are a grill through the winter kind of family so I have to tell you…don’t put your grill away just because summer is winding down!

August and September are some of our favorite times to break out the grill. Do keep in mind that finding briquettes after September/October can be a challenge in some stores. We like to stock up on a few extra bags but here’s my pro tip: you can almost always find some hidden back in the garden or hardware section of stores during the winter if you ask the stockers. Or head to your hardware store and raid their selection with the out of season BBQ’s.

Okay, enough BBQ talk, can we talk about these artichokes? Hello gorgeous.

They are juicy and smoky and…I maybe brushed them with bacon grease before I grilled them because I’m just that kind of person.

Artichokes are one of my favorite things to eat and are one of the most interesting plants to see growing. They look like little aliens to me with their bulb heads and swaying arms haha.

See those gorgeous purple hearts? That is the perfect artichoke, the purple means they were picked at the peak of ripeness just before they bloomed into an incredible purple flower!

I know I can’t be the only one who totally geeks out over how awesome farms are! One of the things I learned from there was that they have heirloom artichokes, (which is what we have always attempted to grow), and annual artichokes! I had no idea that they could grow in such a short season.

Currently, artichokes are coming out of Castroville, California but with all their incredible farms they are able to produce year round. I loved this video about their company and it’s obvious that they truly care about their farms and their workers.

The kids devoured the artichokes and gnocchi and of course weren’t going to complain about that peach angel food cake.

We drizzled the angel food cake with caramel and filled it with fresh peaches and whipped cream. So simple and quick!

Shockingly I’ve never met someone who complained about dessert not taking hours of slaving in the kitchen haha!

Grilled Artichokes with Pesto Gnocchi Recipe

Ingredients

  • 4 artichokes washed, stems trimmed and cooked until just tender
  • 2 packages gnocchi
  • ¼ cup edamame
  • ¼ cup pesto
  • 4-6 slices of bacon cooked and crumbled, reserve fat
  • fresh arugula
  • Top with:
  • thinly sliced radish
  • handful of multi colored cherry tomatoes
  • parmesan cheese
  • fresh cracked black pepper
  • lemon wedges
  • Extra pesto for dipping artichokes

Instructions

  • 1. Slice cooked artichokes in half with a sharp serrated knife.
  • 2. Hold them firmly together while cutting to get cleanest cut.
  • 3. Brush with leftover bacon grease from the bacon cooking.
  • 4. Prepare grill with wood chips if desired. Grill for 4-5 minutes until smoky and grill marks are apparent.
  • 5. Cook gnocchi in boiling water until they float.
  • 6. Add edamame and blanch for 1 minute with gnocchi. Drain entire pan.
  • 7. Toss hot gnocchi and edamame with pesto and bacon.
  • 8. Line platter with fresh arugula and pour gnocchi over the top. Top with sliced radishes, cherry tomatoes, fresh cracked black pepper and parmesan cheese.
  • 9. Serve immediately with grilled artichokes, lemon wedges and extra pesto for dipping! Enjoy!
