Slow Cooker Beef Tortas (Video!)

There is something special about trying new foods with my husband. Maybe it’s the fact that our relationship started out with such a jolt around “adventure bites”. Every time we try something new together it brings me back to when we first fell in love and makes me fall for him a little bit more. In the day in and day out, it’s one of the few times where life is different, exciting, fresh.

We recently discovered tortas. I know we are probably eons behind everyone else, but after a friend described the ones he gets from the little family run 24 hour a day mexican restaurant just blocks down the street from us, we decided we had to go try one.

It was freezing cold outside, as is to be expected in central Oregon. We bundled up and walked through the bitter wind, stepping over ice puddles and trying to walk as briskly as possible without seeming like we were rushing. Date nights are these precious stolen moments together. This brief reprieve from what feels like a whirlwind of chaos (albeit happy chaos) around us all the time.

Our verdict was that tortas will forever be part of our life. They are basically like the burger of mexican cuisine. Perfect comfort food. That mexican restaurant is becoming a dangerous thing to live so close to.

But part of the thing that I love about Kevin is that as soon as we eat something amazing out at a restaurant we immediately have to pick it apart and then recreate it at home.

It was of course serendipitous timing that literally days after we took the jaunt to eat these tortas that La Brea Bakery came to us with this post idea. Their delicious Telera rolls are now available in slider sizes and they wondered if we would like to make something delicious with them.

And so in perfect timing as life seems to just be flowing in these days, we created these torta sliders. All the heavenly flavors of a torta packed into a more reasonable size that’s perfect for entertaining.

As is the case more and more these days I leaned on my slow cooker to create this fantastic and super easy thinly sliced seasoned beef. The Telera rolls are the perfect soft sandwich rolls with mild sourdough notes and a touch of sweetness. We took these crispy buttery buns and filled them with meat, beans, guacamole and veggies. And since I can’t help but turn everything into a french dip look-a-like I serve them with the cumin spiced broth as a dipping broth. Heavenly.

A huge thank you to La Brea Bakery for collaborating with us on these slow cooker beef tortas and for creating these amazing breads. If you haven’t tried them before let me tell you, you need to. They are my go to bread and rolls for serving alongside soup or making appetizers. Anytime I need a crusty loaf or a good roll I grab their products. We were already huge fans of their products before we met with them to partner together so it just feels so good and right to be creating beautiful recipes like this together.

My primary reasons for adoring their breads is that they are sourdough based which gives them a flavor that I adore and because they are par baked and finish baking in my oven at home. I love that I can make the house smell amazing and get that fresh baked taste for whatever I am serving.

All those things taken into account it’s not surprising to me at all that they are the #1 best selling artisan bread in the country! I find mine at Fred Meyers since I practically live there (Krogers in other places) in the bakery area but you can also find them at Costco, Safeway and lots of other retailers.

Ingredients

  • 1 onion chopped
  • 3 cloves garlic minced
  • 24 ounces thinly sliced beef my store sells it vacuum sealed in12 oz packages in fresh meat area
  • 1 quart beef stock
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • Serve with La Brea Bakery Telera Slider Rolls and your choice: refried beans guacamole, lettuce, tomato, sliced red onion, cilantro, fresh sliced jalapeños, salsa and hot sauce.

Instructions

  • 1. Add onion, garlic, beef, and stock to slow cooker. Cook for 4 hours on high or 8 hours on low.
    2. Butter and toast rolls. Top half with refried beans and a half with guacamole. Add other toppings and meat.
    3. Serve with dipping sauce on the side if desired or plenty of salsa or hot sauce.
