S’more Cupcakes

Oh, be still my heart.

Whoever kicked off this “make everything in the entire culinary world into one big giant s’more fest”….thank you. The world is a better place because there are more excuses to stuff marshmallows into our face with reckless abandon.

Speaking of reckless abandon….we took Noah camping for the first time a few weeks ago.

This kiddo was in his element. He was dirty from head to his toes in under 3 minutes flat. After a lovely picnic dinner, we attempted a precarious canoe experiment which in my head sounded like this amazing magical idea….

Everyone will pile somewhat gracefully into the canoe, Noah will sit behind me with Kevin and Phin will sit at my feet. We will row the boat across the serene lake. It will be beautiful. Noah will be in awe of the water and the sky and all the beautiful birds. Maybe we will all jump in and take a swim. 

What it really turned out to be?

AAAAAAHHHHHHHH!!!!

One toddler who thought to leap from side to side of our wobbly 2-foot wide vessel was the best fun ever. One top-heavy life-vested baby who had learned to pull himself up a week earlier who alternated between reaching as far as his arms and tippy toes would let him to dip his hands into the water and attempting to chuck mommy’s ziplocked iPhone into the lake. One lake with early evening crazy choppy water. Two kayak paddles. And one really short, anxiety-filled 10 minutes “boat ride” which mostly consisted of us floating 15 feet offshore and working our way back and forth down the shoreline while arguing the merits of being on the water vs being back at camp.

We’ve decided we are sticking with S’mores for a few years.

After I managed to regain my composure, we built a fire (AKA Kevin built a fire and I sat in my comfy camp chair with Phin and watched). Noah spent the next hour happily chucking pinecones, sticks, rocks and anything else he could get his dirty little hands on before we could catch him, into the fire. Finally, the coals were ready and we began to explain to him what a S’more was.

“Hey, buddy do you want to make a s’more?”

“s’more??”

“Yeah, it’s like a marshmallow”

*Smile*

“And we are gonna put it on a stick”

*Eyes widen*

“And stick it in the fire”

*Grin*

“And then we are gonna put chocolate on it”

*Eyes even bigger* “Yeah!”

“And then put it between two graham crackers”

*Furrowed brow*

“They are like…like cookies”

*Mind officially blown, eyes as big as they can get with a ridiculous grin and state of disbelief*

“YEAH MOMMY!! I WANT IT!! I LIKE S’MORES!”

Needless to say, we have begun the love of camping in this boys heart at a young age….and a definite love of s’mores.

I won’t pretend that this is an epic complicated recipe…but let’s jump into this crazy goodness.

My new favorite chocolate cupcakes are baked and cooled.

Equal parts of chocolate and piping hot heavy cream sit together for a few minutes and then get stirred together into a perfectly velvety thick chocolate ganache. Dip it, frost it, swim in it. Whatever it takes.

Then we pulverize some graham crackers into mostly tiny crumbs with some bigger chunks. Dip or spoon the crumbs onto the ganache covered cupcakes and then push a few extra big pieces in where it looks right.

Marshmallows on a cookie sheet meet the broiler and things start getting toasty between them. Maybe a bit too toasty….look out! I burned more than a few pans of these babies during testing. They take a few minutes to get going and then BAM! they are burnt to a crisp. The fun trick when you are camping but not so much on top of your beautiful cupcake.

At the end of all things we smash that marshmallow into that chocolatey graham cracker goodness and dig in. And like every good s’more they really do deserve to be eaten with a hot sticky gooey marshmallow that oozes out everywhere if you can manage it. Sticky fingers, sticky face, happy camper.

Ingredients

  • For cupcakes:
  • 2 cups spelt flour
  • 1 1/4 cups sugar I used turdinado
  • 3/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoon salt
  • 1 cup olive oil
  • 1 3/4 cup buttermilk coconut milk can be substituted for dairy free option
  • 3 eggs
  • 1 teaspoon vanilla
  • For Frosting:
  • Equal parts chocolate and heavy cream about 1 cup each
  • For Toppings:
  • Crushed graham crackers
  • Marshmallows

Instructions

    2. Chop or break up chocolate into pieces. Heat heavy cream until almost boiling. Pour over chocolate and allow to stand for 2-3 minutes. Stir until fully combined and creamy. If chocolate does not melt immediately it can be microwaved for a few seconds at a time or placed over a double boiler.
    3. Dip cupcakes into the ganache and spread until evenly coated. Dip into crushed graham crackers and set aside.
    4. Place marshmallows on a cookie sheet and toast under broiler watching continuously. Rotate pan if needed to evenly brown. Top each cupcake with a toasted marshmallow and press firmly to adhere to the top.
