Mom's Maple Applesauce Cupcakes

Mom's applesauce cupcakes are filled with warm fall spices and no refined sugars. The applesauce and maple syrup keeps them dense, moist and sweet.
Serves: 24 small cupcakes or 18 regular
  • ½ cup butter softened
  • ¾ cup maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 tablespoons pumpkin pie spice
  • 1 teaspoon salt
  • 2 cups spelt flour plus 2 tablespoons (I prefer spelt over white flour in this recipe)
  • 1¼ cups applesauce, steaming hot
  1. Preheat oven to 350 degrees.
  2. Cream butter with mixer for 2-3 minutes until light and fluffy. Add maple syrup and 2 tablespoons of flour and whisk for 1-2 minutes. Butter will be lumpy.
  3. Add vanilla, baking powder, pumpkin pie spice, salt and flour and mix with wooden spoon until just combined (some dry patches are okay).
  4. Add hot applesauce and stir with spoon until incorporated.
  5. Bake immediately in lined or greased muffin tin or sheet pan.
  6. Cook until toothpick comes out clean, about 15-20 minutes for cupcakes, 30-40 for a sheet pan. Top will still look slightly wet.
  7. Allow to cool 10 min in pan, then move to a cooling rack to completely cool. Dust with powdered sugar, or frost with maple cream cheese frosting.
