Strawberry Rhubarb Smoothie

All the flavors of your favorite pie are packed into this strawberry rhubarb smoothie. Perfect for using up that summer bounty or freeze your fruit and make it all winter.
Serves: 10 ounces
  • 1 stalk fresh rhubarb, leaves removed, stems chopped in 1 inch chunks *SEE NOTES
  • ½ pint fresh strawberries, stems removed
  • 8 ounces milk or coconut milk
  • 1 banana (fresh or frozen is delicious too!)
  • ½ cup ice
  • ½ teaspoon bee pollen (optional)
  1. Add the milk, rhubarb, strawberries, banana and ice to the blender.
  2. Blend.
  3. Top with a sprinkle of bee pollen on top if desired.
NOTE: Rhubarb leaves are poisonous, most come just as stalks but if you harvest it fresh be sure to remove all leaf matter before using the stalks or you could end up quite sick.
