This healthy Waldorf salad with cranberries and jicama is a bright and colorful twist on a classic! Perfect for the holidays!

  • Dressing:
  • ½ cup whole milk yogurt
  • 2 tablespoons apple cider vinegar
  • Salt and pepper
  • 1 ½ cups diced jicama
  • 1 ½ cups diced apple
  • 1 stalk celery, sliced
  • ¼ cup dried sweetened cranberries
  • ¼ cup chopped walnuts
  • 1 cup Tanimura & Antle® Artisan™ Lettuce salad greens - rinsed, patted dry and chopped
  • Tanimura & Antle® Artisan™ lettuce (whole) leaves, to serve on
  1. Whisk dressing ingredients together. Toss dressing with jicama, apple, cranberries, walnuts and salad greens. Serve immediately on top of a bed of lettuce leaves. Top with additional walnuts and cranberries if desired.
  2. Important: If preparing ahead of time, wrap the salad tightly in plastic wrap and do not add to platter until serving time or lettuce leaves will wilt.
