Crispy Roasted Brussels Sprouts with Feta & Bacon

These crispy roasted brussels sprouts with feta and bacon are the perfect hummus platter addition!
Serves: 4 servings
  • 1-2 lbs fresh brussels sprouts (look for smaller sprouts if possible, they get crispier)
  • olive oil
  • salt and pepper
  • 3-4 slices thick cut bacon, cooked and crumbled
  • ¼ cup feta cheese
  • Serve with: hummus, veggies, pita, cheeses and olives
  1. Cut brussels sprouts in half or quarters if they are extra large.
  2. Roast brussels sprouts with olive oil and salt and pepper in oven at 400 degrees until the edges are crispy and they are cooked through (about 20-30 minutes depending on size). Check regularly and stir to get all sides crispy.
  3. Top with bacon crumbles and feta cheese
