Chai Baked Oatmeal

Cozy warm baked oatmeal filled with all the spices of a chai latte. Packed with eggs and greek yogurt for the healthy part and then covered in honey and butter to keep it all in balance.
Serves: 1 pan
  • 3 cups oatmeal
  • 2 cups nonfat greek yogurt
  • 3 eggs
  • 2 tablespoons maple syrup
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • ½ teaspoon allspice
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground cardamom
  • 1 teaspoon baking soda
  • pinch of salt
  • Top with:
  • 4 tablespoons butter
  • Honey or maple syrup
  • Almonds
  • Serving Suggestions:
  • Apple compote, fresh fruit, milk or cream
  1. Combine all ingredients in baking pan.
  2. Bake for 30-35 minutes.
  3. Top with honey and butter. Broil until butter is melted.
  4. Serve with almonds, milk or cream and more honey (if desired). Also is delicious with fresh or with baked in fruit or jam.
