Caprese Hummus Tortilla Pizzas

These hummus tortilla pizzas are the perfect easy lunch. Add tomatoes, mozzarella, basil and a delicious balsamic reduction and we are in business.
Serves: 2 servings
For Reduction
  • ½ cup balsamic
  • 2 tablespoons honey
  • 4 tablespoons Sabra hummus (regular or roasted garlic are fabulous)
  • 2 small tortilla
  • 1 tomato or a few baby tomatoes
  • 2-3 slices of mozzarella cheese or mini mozzarella balls
  • 4 leaves basil
  • parmesan cheese (optional)
  1. Bring balsamic vinegar and honey to a boil in a small saucepan. Reduce heat to simmer and cook until thickened, about 10 minutes.
  2. Preheat oven to 350 degrees.
  3. Spread hummus on tortillas. Top with tomatoes and mozzarella cheese.
  4. Bake for 10 minutes.
  5. Top with basil, balsamic reduction and a pinch of parmesan cheese if desired.
