I love Mexican food so much, it seems that I always have an appetite for the stuff. Rice and Beans are like my ultimate comfort food but I can never decide which enchilada is my favorite, chicken or beef. So why not just make them both! You can’t go wrong with that kind of attitude, LOL!  

These delicious chicken enchiladas have this fantastic green chili sauce that is packed with flavor and so perfectly blended. The classic beef enchiladas are covered with this mouthwatering red and spicy sauce. I love to spoil my family and make both kinds at once! Each of these delicious enchiladas perfectly pairs with rice, beans, salsa, and chips. It is easily my favorite meal of all time especially for a busy weeknight!

How to make enchiladas?

I start making these delicious enchiladas by cooking meat in a pan over medium heat. Mixing in my homemade taco seasoning until the meat is lightly coated. Then add chopped onion, minced garlic, salt & pepper. Cook the meat fully. Once meat is cooked, drain the oil from the pan and let it cool. Once meat is cooled we roll the enchiladas. Warm the tortillas until flexible. Fill each with meat, cheese and enchilada sauce. Roll and place in pan. Roll as many as will fit tightly in your pan. Pour enough sauce over the tops of the enchiladas to cover all but the very tops of the tortillas. Then sprinkle with cheese and bake.

Ingredients

Homemade Taco Seasoning

  • ½ tsp onion powder
  • ¼ tsp black pepper
  • 1 tsp chili powder
  • ¼ tsp garlic powder
  • ¼ tsp red pepper flakes
  • ½ tsp dried oregano
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt

Chicken Enchiladas Recipe

  • 2 cup chicken, cooked shredded
  • 1 red onion
  • ½ cup water
  • 1 bunch cilantro
  • 1 tbsp homemade taco seasoning
  • 1 pack corn tortillas
  • 3 cups of shredded cheese
  • 1 can green enchiladas sauce

Beef Enchiladas Recipe

  • ½ lb ground hamburger meat
  • 1 red onion
  • ½ cup water
  • ½ bunch of cilantro
  • 1 tbsp homemade taco seasoning
  • 1 pack corn tortillas
  • 3 cups of shredded cheese
  • 1 can red enchiladas sauce

Instructions

  • Preheat the oven to 400 
  • Chop up one medium sized red onion.
  • Place half in skillet and cook until almost translucent.
  • Then add a cup of water, ½ a bunch of cilantro, meat, and seasonings. Reduce liquid. Remove from heat drain and let cool.
  • Gather a 9×13 baking pan and fill the bottom of the pan with enchilada sauce.
  • Warm tortillas in order to fold them. 5-10 seconds in the microwave should do. 
  • Fill the tortillas one by one with meat, cheese, one tablespoon enchiladas sauce and fold. (how to fold, start with placing the filling in the middle of the tortilla and fold the two sides in just over the meat then roll the tortilla up tight)
  • Once the pan is filled, cover generously with sauce. Cover with cheese and topping if desired.
  • Cover with foil and bake for 35 minutes at 400.
  • Remove from oven and let cool for 15 mins.
  • Serve with rice, beans, salsa or chips and enjoy!
