I’ve been making pancakes from scratch for years but recently learned how to make pancake mix. It seems like a logical thing to make up several batches ahead of time but I just never did it. I love that I don’t have to mess with multiple containers when I want to make just a couple of pancakes!
This pancake mix recipe is the perfect way to give packaged white flour pancakes the boot! Now you legitimately have no excuses for not whipping something more nutritious and tasty for your family on those hectic mornings.
All the dry ingredients get mixed together and stored so there is no fumbling with measuring cups or wondering if you forgot to put in that pesky teaspoon of baking powder. One heaping cup of this pancake mix and a few wet ingredients will turn out 7-8 beautiful healthy pancakes in no time.
Be certain not to overmix the batter or your pancakes will turn out tough. Just a quick stir, until it is moistened, will give you the best healthy pancakes you could ask for!
This mix also makes awesome healthy waffles too in case you prefer waffles. I usually add a bit more buttermilk to the batter to make it easier to spread in the waffle iron so feel free to experiment with what works best with your waffle iron.

- 4 cups spelt flour, can sub any flour but we love spelt!
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt

We love spelt also. Being gluten intolerant, I am happy that me and my family can eat spelt without getting sick. I was wondering if you used whole spelt or light/white spelt flour.
