Healthy Bran Muffins

A delicious healthier version of my grandma's bran muffins. Perfect for breakfast with a cup of hot coffee.

Ingredients

  • 4 cups all bran
  • 2 cups raisin bran
  • 3 cups buttermilk
  • 1 cup applesauce
  • 1 banana mashed
  • 2 cups boiling water
  • 3/4 cup butter
  • 1 cup honey
  • 4 eggs lightly beaten
  • 2 1/2 cups whole wheat flour
  • 2 1/2 cups white flour
  • 5 tsp baking soda
  • 1 tsp salt
  • 1 cup raisins

Instructions

  1. Preheat oven to 350 degrees
  2. Combine All Bran, Raisin Bran and Buttermilk and allow to soak.
  3. Combine boiling water and butter. When cooled add eggs. Add applesauce, mashed banana and raisins. (Add any additional fillings here....nuts, cranberries, etc)
  4. Mix bran mixture and liquid mixture gently.
  5. Combine dry ingredients and mix dry into wet ingredients. Do not overstir or you will get tough muffins.
  6. Fill muffin tins with liners or spray. Fill 3/4 full and bake 15-20 minutes.

Recipe Notes

These are around 135 calories per muffin and have approx 10.6 grams of sugar. You could reduce the honey even further to lower this or use a lower sugar raisin bran.
