Stuffed Peppers

Ingredients

  • 1 lb ground beef
  • 1 meduim white onion diced
  • 1 tbsp garlic minced
  • 6 whole Bell Peppers Red Yellow and Green
  • 2 cups long grain rice cooked
  • 2 tbsp tomato paste
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 15 oz can Black Beans drained
  • 1 7 oz can roasted green chiles drained
  • 1 cup corn
  • 1 cup picy cheese such as Chipotle Gouda or Pepper Jack shredded
  • 1/4 cup cilantro leaves chopped plus more for garnish

Instructions

  • Preheat oven to 350.
  • Cook the beef, garlic, and onion until evenly browned.
  • Wash and remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward.
  • In a bowl, mix the browned beef, cooked rice, tomato sauce, spices, black beans, roasted green chiles, and corn.
  • Top with shredded cheese and cover with foil.
  • Bake 30 minutes to 1 hour depending on the size of bell pepper in the preheated oven, cook until the peppers are tender.
  • Let cool 15 minutes. Top with cilantro. Enjoy!
