1cuppicy cheese such as Chipotle Gouda or Pepper Jack shredded
1/4cupcilantro leaves chopped plus more for garnish
Instructions
Preheat oven to 350.
Cook the beef, garlic, and onion until evenly browned.
Wash and remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward.
In a bowl, mix the browned beef, cooked rice, tomato sauce, spices, black beans, roasted green chiles, and corn.
Top with shredded cheese and cover with foil.
Bake 30 minutes to 1 hour depending on the size of bell pepper in the preheated oven, cook until the peppers are tender.
