Ingredients

  • 1 ½ cups diced jicama
  • 1 ½ cups diced apple
  • 1 stalk celery sliced
  • ¼ cup dried sweetened cranberries
  • ¼ cup chopped walnuts
  • 1 cup Tanimura & Antle® Artisan™ Lettuce salad greens - rinsed patted dry and chopped
  • Tanimura & Antle® Artisan™ lettuce whole leaves to serve on
  • Dressing:
  • ½ cup whole milk yogurt
  • 2 tablespoons apple cider vinegar
  • Salt and pepper

Instructions

  • 1. Whisk dressing ingredients together. 2. Toss dressing with jicama, apple, cranberries, walnuts, and salad greens. 3. Serve immediately on top of a bed of lettuce leaves. 4. Top with additional walnuts and cranberries if desired. Enjoy!

Notes

Important: If preparing ahead of time, wrap the salad tightly in plastic wrap and do not add to a platter until serving time or lettuce leaves will wilt.
