Ingredients

  • 1-2 lbs fresh brussels sprouts look for smaller sprouts if possible they get crispier
  • olive oil
  • salt and pepper
  • 3-4 slices thick-cut bacon cooked and crumbled
  • 1/4 cup feta cheese
  • Serve with: hummus veggies pita, cheeses and olives

Instructions

  • 1. Cut brussels sprouts in half or quarters if they are extra-large.
    2. Roast brussels sprouts with olive oil and salt and pepper in the oven at 400 degrees until the edges are crispy and they are cooked through (about 20-30 minutes depending on size). Check regularly and stir to get all sides crispy.
    3. Top with bacon crumbles and feta cheese. Serve hot and enjoy!
