Our wonderful Blueberry French Toast Bake is so easy to make ahead especially topped with the maple syrup and fresh blueberries.

Ingredients

  • 1 loaf of bread cubed I like to use brioche
  • 1 cup blueberries fresh or frozen
  • 1 1/2 cups milk
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons maple syrup or more to taste
  • confectioners’ sugar
  • Mint
  • Maple syrup

Instructions

  • Lightly coat a 9×13 baking dish with nonstick spray.
  • In a large bowl mix eggs, milk, spices, and vanilla well.
  • Place cubed bread into the egg mixture and stir. Make sure all the bread is soaked.
  • Place a layer of bread cubes evenly into the baking dish. Top with blueberries in an even layer, repeating 2 more times and ending with a layer of bread.
  • Cover and place in the refrigerator for at least 2 hours or overnight.
  • Preheat oven to 350 degrees F.
  • Bake for 35-45 minutes, or until the top is golden brown.
  • Serve immediately, sprinkled with confectioners’ sugar and maple syrup, enjoy!
