- 3 lb beef chuck roast cubed into 2-inch chunks
- 2 tbsp olive oil
- 1 ¼ cups beef broth
- 3 tsp minced garlic
- 1-6 chipotles peppers in adobo sauce minced
- 3 tbsp Diced Green Chiles
- 1 ½ tsp minced garlic
- 2 tbsp cumin
- 1 tbsp oregano
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup lime juice
- ½ cup honey
- 3 bay leaves
1. Turn Instant Pot to saute.
2. Add olive oil and heat to sizzling. Add beef cubes and sear the beef on all sides.
3. Add all other ingredients.
4. Cook on high pressure for one hour.
5. Shred meat with two forks.
6. Serve hot and enjoy!
