Ingredients

1 ½ cups diced jicama
1 ½ cups diced apple
1 stalk celery sliced
¼ cup dried sweetened cranberries
¼ cup chopped walnuts
1 cup Tanimura & Antle® Artisan™ Lettuce salad greens - rinsed patted dry and chopped
Tanimura & Antle® Artisan™ lettuce whole leaves to serve on
Dressing:
½ cup whole milk yogurt
2 tablespoons apple cider vinegar
Salt and pepper

Instructions

1. Whisk dressing ingredients together. 2. Toss dressing with jicama, apple, cranberries, walnuts, and salad greens. 3. Serve immediately on top of a bed of lettuce leaves. 4. Top with additional walnuts and cranberries if desired. Enjoy!

Notes

Important: If preparing ahead of time, wrap the salad tightly in plastic wrap and do not add to a platter until serving time or lettuce leaves will wilt.
