  • Seasoned black beans:
  • 1 regular can black beans
  • 1 tsp cumin
  • 1 tsp chili powder
  • salt and pepper to taste
  • 2 cups rice
  • 2 fried eggs
  • Toppings:
  • diced tomatoes
  • cilantro
  • cotija cheese
  • sliced jalapeños
  • lime wedges
  • tortilla chips or pan fried corn tortillas
  • guacamole
  • sour cream
  • 1/2 cup guacamole salsa
