2cupsspelt flour plus 2 tablespoons I prefer spelt over white flour in this recipe
1 1/4cupsapplesauce steaming hot
1. Preheat oven to 350 degrees. 2. Cream butter with mixer for 2-3 minutes until light and fluffy. Add maple syrup and 2 tablespoons of flour and whisk for 1-2 minutes. Butter will be lumpy. 3. Add vanilla, baking powder, pumpkin pie spice, salt and flour and mix with a wooden spoon until just combined (some dry patches are okay). 4. Add hot applesauce and stir with a spoon until incorporated. 5. Bake immediately inlined or greased muffin tin or sheet pan. 6. Cook until a toothpick comes out clean, about 15-20 minutes for cupcakes, 30-40 for a sheet pan. The top will still look slightly wet. 7. Allow to cool 10 min in the pan, then move to a cooling rack to completely cool. Dust with powdered sugar, or frost with maple cream cheese frosting.
