Weeknight Beef Gyro Recipe

This beef gyro recipe is perfect for mixing up weeknight meal time! Strip steak gets sliced thin and marinated, then stuffed into pitas with hummus, cucumber yogurt sauce and tons of veggies.

Ingredients

  • For meat:
  • 1 1/3 lbs skirt steak thinly sliced
  • 1/2 cup greek yogurt
  • 2 tablespoons minced garlic
  • 1/4 cup red wine
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • For Tzatziki Sauce:
  • 1 cucumber peeled and small diced
  • 1/2 cup greek yogurt
  • juice of 1/2 a lemon to taste...start with 1/4
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • cayenne pepper to taste if desired
  • Serve with:
  • Warm pita bread
  • Veggies lettuce tomatoes, sprouts, cucumber slices, red onions
  • Sabra original hummus with a drizzle of good olive oil
  • Feta cheese
  • Greek olives optional

Instructions

  • 1. Marinate meat covered in the fridge with yogurt, wine and seasonings for 30 min-1 hour.
    2. Combine cucumber, yogurt, and spices for tzatziki sauce.
    3. Cook meat over medium-high heat until cooked through (3-5 minutes) and serve immediately with pita and filling ingredients.
