Ingredients
1/2cupMadhava coconut sugar sifted plus extra for rolling
1/2cup1 US stick salted butter
1egg
1/4cupMadhava honey
1 1/2-2cupsspelt flour less gives more of an oatmeal cookie type consistency
2teaspoonsbaking soda
1/2teaspoonsalt
1/2teaspooncinnamon
1/2teaspoonginger
1/2teaspoonnutmeg
Instructions
1. Preheat oven to 350 degrees. 2. Cream butter and coconut sugar with a mixer for 2-3 minutes. 3. Add egg and honey and mix until combined. 4. Combine all dry ingredients together and add in two batches to wet mixture. 5. Line two cookie sheets with parchment paper. 6. Using a teaspoon (not a typo) scoop out a completely rounded scoop (about 2 teaspoons total) and roll in coconut sugar. Press flat in hand and shape round. They will be the size of quarters roughly and will double in size. 7. Bake for 9 minutes. Allow to cool completely then serve plain, drizzle with honey, or a simple glaze if desired.
