Spinach Stuffed Shells Recipe

- 1 box shells I don't usually use all of them--12-20 are adequate for a large pyrex
- Filling:
- 1 cup fresh or frozen spinach
- 1/2 cup Nancy's cottage cheese
- 2 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup shredded cheese optional
- 2-3 cups chunky marinara sauce
- shredded cheese to top
Cook noodles 2 minutes under package directions so they are flexible but not quite al dente.
Mix filling ingredients together.
Stuff shells with mixture.
Add a layer of sauce to the bottom of the pan to prevent burning. Add shells and top with remaining sauce.
Add shredded cheese to the top of sauce. Cover in foil and bake at 350 degrees for 30 minutes.
Serve hot and enjoy!
