Caprese Hummus Tortilla Pizzas

These hummus tortilla pizzas are the perfect easy lunch. Add tomatoes, mozzarella, basil and a delicious balsamic reduction and we are in business.

Ingredients

  • For Reduction
  • 1/2 cup balsamic
  • 2 tablespoons honey
  • 4 tablespoons Sabra hummus regular or roasted garlic is fabulous
  • 2 small tortilla
  • 1 to mato or a few baby tomatoes
  • 2-3 slices of mozzarella cheese or mini mozzarella balls
  • 4 leaves basil
  • parmesan cheese optional

Instructions

  • Bring balsamic vinegar and honey to a boil in a small saucepan.
  • Reduce heat to simmer and cook until thickened, about 10 minutes.
  • Preheat oven to 350 degrees.
  • Spread hummus on tortillas.
  • Top with tomatoes and mozzarella cheese.
  • Bake for 10 minutes.
  • Top with basil, balsamic reduction and a pinch of parmesan cheese if desired.
