These hummus tortilla pizzas are the perfect easy lunch. Add tomatoes, mozzarella, basil and a delicious balsamic reduction and we are in business.

Having kids…particularly two boys who NEVER stop eating all morning and afternoon means that I’m constantly trying to come up with new inventive ways to whip something up in 10 minutes. Because up until then I will have been cleaning up the previous mess from breakfast….then elevensies, twelvisies, and don’t forget tea time. Once I am finished scrubbing down the babies chair and maybe sweeping the floor, it is guaranteed that I will turn around and Noah will declare once again that his tummy is “so hungry!”

These hummus tortilla pizzas sustain our family. They fit the bill perfectly for fast, delicious and not a peanut butter sandwich (which otherwise could be eaten morning, noon and night here). Sometimes these just get a sprinkling of cheese on them and some sliced tomatoes on the side, sometimes I cover mine with delicious left over roasted veggies. But today we are going caprese style!

In essence the only thing separating this from kid food is our super sophisticated sauce. Balsamic and honey boil down to a delicious sticky sauce that is perfect for drizzling. Bring it to a boil and then reduce to a low simmer for about 10 minutes until it’s thickened and glorious.
You can however over thicken it as I learned the hard way….so do take it off while it still seems a bit thinner than you ultimately want it and don’t leave it on high the whole time and forget about it.
The kids love it when they get to help sprinkle toppings on them. A thick layer of Sabra hummus, fresh tomatoes, and mozzarella cheese slices get sprinkled on. Into the oven at 350 degrees it goes!


And then the basil! You know it’s spring when the basil all comes into the stores and I cannot get enough of it. Our new (to us) greenhouse is up finally and we are just inching our way into planting things in it. Salad greens are popping up and hopefully this weekend we will muster up the gumption to get some starts and plant it.
But we have basil! And it’s loving the greenhouse!

Once your pizzas are good and toasty, toss some chopped basil on and a drizzle of that sauce. It’s kids lunch all dressed up in grown ups clothes.

Caprese Hummus Tortilla Pizzas
Ingredients
- For Reduction
- 1/2 cup balsamic
- 2 tablespoons honey
- 4 tablespoons Sabra hummus regular or roasted garlic is fabulous
- 2 small tortilla
- 1 to mato or a few baby tomatoes
- 2-3 slices of mozzarella cheese or mini mozzarella balls
- 4 leaves basil
- parmesan cheese optional
Instructions
- 1. Bring balsamic vinegar and honey to a boil in a small saucepan. Reduce heat to simmer and cook until thickened, about 10 minutes.
2. Preheat oven to 350 degrees.
3. Spread hummus on tortillas. Top with tomatoes and mozzarella cheese.
4. Bake for 10 minutes.
5. Top with basil, balsamic reduction and a pinch of parmesan cheese if desired.
