Coconut Panna Cotta

A lovely sweet creamy panna cotta with tropical flavors.

Ingredients

  • 1 cup 1/2 and 1/2
  • 1 can coconut milk full fat
  • 3 packets stevia or sugar
  • 2 tsp vanilla
  • 2 packets gelatin
  • papaya
  • blueberries
  • fresh mint

Instructions

  • Warm the half and half in a small saucepan. Pour the gelatin over the coconut milk and let sit for a minute or two while the half and half warms.
  • Pour the coconut milk into the saucepan and warm gently, stirring to dissolve the gelatin completely.
  • Add stevia or sugar and stir till dissolved.
  • Remove from heat and add vanilla.
  • Pour into glasses or ramekins and chill until set (about 2 hours up to several days before)
  • Chop up papaya and mix with blueberries. Adjust sweetness/tanginess with sugar or lime juice if needed.
  • Chop up a bit of mint and mix with fruit.
  • Serve in the glass or unmold ramekins onto a plate.
