- Dressing:
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- Pinch of salt and pepper

- Toppings:
- ½ cup pomegranate seeds
- ¼ cup crumbled goat cheese
- ¼ cup slivered almonds
- 2 orange tomatoes sliced
- ¼ cup pepitas
Whisk dressing ingredients together. Toss lettuce with dressing and toppings. Serve immediately.
If preparing ahead of time, do not add dressing to the salad until serving time. Enjoy!
