Pomegranate Salad with Balsamic Honey Dressing

This festive holiday salad is packed with crunchy pomegranates, goat cheese and crunchy yellow peppers. We drizzle it with balsamic honey dressing.

It’s holiday season in full force here and all the cookies and cakes and goodies are starting to take their toll. I adore baking and eating said baked goods but after years of paring back on sweets and processed foods the holidays seem to hit me even harder as a shock to my system. So for seasons like this my favorite way to counter the constant sugar buzz is with salads.

Adding in a big green leafy salads like this pomegranate salad, our healthy Waldorf salad and this pear salad with figs and caramelized onions help my body get back into the swing of things again.

This balsamic honey dressing is one of my favorite ways to get the boys interested in salads. It’s sweet and tangy and so simple to make. They can’t get enough of the pomegranates either, so even if all they do is pick through the pomegranate salad and eat all the yummy bits…I still feel good knowing they are getting a lot of real food in them.

Pomegranate Goat Cheese Salad with Balsamic Honey Dressing Recipe

This festive holiday salad is packed with crunchy pomegranates, goat cheese, and crunchy yellow peppers. We drizzle it with balsamic honey dressing.

Ingredients

  • Dressing:
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Pinch of salt and pepper
  • 3-4 cups Tanimura & Antle® Artisan Lettuce™ cut, rinsed and patted dry.
  • Toppings:
  • ½ cup pomegranate seeds
  • ¼ cup crumbled goat cheese
  • ¼ cup slivered almonds
  • 2 orange tomatoes sliced
  • ¼ cup pepitas

Instructions

  • 1. Whisk dressing ingredients together. Toss lettuce with dressing and toppings. Serve immediately.2. If preparing ahead of time, do not add dressing to the salad until serving time. Enjoy!
