Blueberry French Toast Bake with Maple Syrup

Our wonderful Blueberry French Toast Bake is so easy to make ahead especially topped with the maple syrup and fresh blueberries.

The weekend is coming up and so is Mother’s day. I have always loved Mother’s we always relax and eat some really good food and I get to see all my wonderful family. Mothers, grandmother, and great grandmothers are honored on Mother’s day in our family.

We always plan a real fest with this amazing blueberry french toast bake. It’s so easy to throw together and everyone always dives right in and devoured this fruity dish. I love the bites of blueberry mixed in with the delight warm cinnamon flavored bread and delightful maple syrup.

How to make french toast bake?

Just start by pre-heating your oven to 365 degrees and grabbing a large mixing bowl. In a large bowl mix eggs, milk, spices, and vanilla well. Place cubed bread into the egg mixture and stir. Make sure all the bread is soaked. Lightly coat a 9×13 baking dish with nonstick spray.

Place a layer of bread cubes evenly into the baking dish.
Top with blueberries in an even layer, repeating 2 more times and ending with a layer of bread. Cover and place in the refrigerator for at least 2 hours or overnight.

Preheat oven to 350 degrees F. Place into oven and bake for 35-45 minutes, or until golden brown. Serve immediately, sprinkled with confectioners’ sugar and maple syrup, enjoy!

When are blueberries in season?

Blueberries will be ready for picking in late July to mid-August. Don’t rush to pick the berries as soon as they turn blue. Wait a couple of days. When they are ready, they should fall off right into your hand.

Ingredients

  • 1 loaf of bread cubed, I like to use brioche
  • 1 cup blueberries, fresh or frozen
  • 1 1/2 cups milk
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons maple syrup or more, to taste
  • confectioners’ sugar
  • Mint
  • Maple syrup

Instructions

  • Lightly coat a 9×13 baking dish with nonstick spray.
  • In a large bowl mix eggs, milk, spices, and vanilla well.
  • Place cubed bread into the egg mixture and stir. Make sure all the bread is soaked.

  • Cover and place in the refrigerator for at least 2 hours or overnight.
