Easy Lunch Box Idea: Grilled Pizza Hummus Sammies

These easy pizza hummus sammies are the perfect easy lunch box idea! We smashed up a grilled cheese and pizza into a healthier version that kids love.

grilled-pizza-sammiesMy oldest son Noah started preschool a few weeks back and we have been having so much fun coming up with new lunch ideas together. When we were at Sabra‘s headquarters earlier this year we got to taste and give feedback on their brand new Pizza flavored hummus and I fell in love with it. It’s all the herb filled goodness of pizza in a perfect little grab and go container!

I also love that it looks visually a bit like those expensive pre-packaged lunches so the kids feel like they are getting a “special lunch” but it’s got zero artificial flavors so everyone in the house is happy. Noah’s class is also filled with every kind of nut allergy you can imagine so I love having another nut-free option for his lunches. We do a soy-butter and jelly sandwich for him too which he likes and we also of course do chicken and egg salad but those take way longer than this combo does.

And I decided to finally jump on the GIF bandwagon so here is a fun little one showing how to make them!

pizzasandwichIn case you can’t see this little clip, we used little whole wheat flatbreads, covered them with the pizza hummus, topped with cheese and deli pepperoni (or any meat/veggies you kids like!), cooked it in a pan for a few minutes on each side to get nice and toasty and dove right in! They stay yummy even when they aren’t served right away too or can be reheated if thats an option for your kiddo.

I like to tuck in another package of the hummus for them to dip their veggies in and of course some kind of fruit or applesauce. If I’ve managed to bake something that week they might get a cookie or muffin snuck in as well but even if I haven’t I feel happy knowing they are getting a good lunch in their tummies.

Serves: 1 Serving
Ingredients
  • 1 flatbread
  • 2-3 tablespoons hummus (we used Sabra's Pizza Hummus)
  • 1-2 tablespoons cheese
  • 4-5 slices deli pepperoni (or whatever meat/veggies your family loves!)
Instructions
  1. Top flatbread with toppings.
  2. Grill for 2-3 minutes each side.
  3. Enjoy!
