Summer is in full swing here and easy dinners are my jam right now. Between 2 new business launches, two toddlers and keeping everything I normally handle running I am exhausted by the time dinner turns around. So this dinner is perfection right now.

Rice in the rice cooker, black beans cooking in the saucepan and eggs frying. This is the kind of food you make when you need pure comfort at the end of the day.
The guacamole salsa is my new addiction, you can get it at some grocery stores or buy it on amazon which is where our obsession started. But it’s truly so simple to make that you have to try our easy guacamole salsa recipe, zero cooking and all in the blender makes it a cinch.
Top with plenty of tomatoes, lime, cilantro and a few jalapenos and you are in business.

Ingredients
- Seasoned black beans:
- 1 regular can black beans
- 1 tsp cumin
- 1 tsp chili powder
- salt and pepper to taste
- 2 cups rice
- 2 fried eggs
- Toppings:
- diced tomatoes
- cilantro
- cotija cheese
- sliced jalapeños
- lime wedges
- tortilla chips or pan fried corn tortillas
- guacamole
- sour cream
- 1/2 cup guacamole salsa
Instructions
- 1. Combine black beans, cumin, chili powder, and salt and pepper and warm them on the stovetop.2. Top rice with black beans, fried egg, and desired toppings. Enjoy!
