Weeknight dinners are the worst part of the day when you have spent the whole day out kicking butt. This easy Instant Pot Beef Barbacoa Recipe is the perfect way to kick a little butt in the kitchen too and in no time flat!
I love that with just a little work and a few spices I can get this into the Instant Pot and ready to go while I mess with the kids, or (gasp) maybe even drink a glass of wine in silence while everyone does their own thing for a blissful moment (I’m dreaming here clearly!).
Barbacoa beef can be a little bit spicy for the kids so if you don’t love spicy or have sensitive tummies you are thinking of, definitely err on the lower side of the chipotle peppers. Most of the barbacoa beef recipes I have made in the past have required you to blend up a sauce beforehand.

Instant Pot Beef Barbacoa Recipe
Ingredients
- 3 lb beef chuck roast cubed into 2-inch chunks
- 2 tbsp olive oil
- 1 ¼ cups beef broth
- 3 tsp minced garlic
- 1-6 chipotles peppers in adobo sauce minced
- 3 tbsp Diced Green Chiles
- 1 ½ tsp minced garlic
- 2 tbsp cumin
- 1 tbsp oregano
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup lime juice
- ½ cup honey
- 3 bay leaves
Instructions
- 1. Turn Instant Pot to saute.
- 2. Add olive oil and heat to sizzling. Add beef cubes and sear the beef on all sides.
- 3. Add all other ingredients.
- 4. Cook on high pressure for one hour.
- 5. Shred meat with two forks.
- 6. Serve hot and enjoy!
