This Instant Pot Beef Barbacoa Recipe is the perfect easy dinner recipe! Use for tacos, rice bowls, burritos and more!
Weeknight dinners are the worst part of the day when you have spent the whole day out kicking butt. This easy Instant Pot Beef Barbacoa Recipe is the perfect way to kick a little butt in the kitchen too and in no time flat!
I love that with just a little work and a few spices I can get this into the Instant Pot and ready to go while I mess with the kids, or (gasp) maybe even drink a glass of wine in silence while everyone does their own thing for a blissful moment (I’m dreaming here clearly!).
Barbacoa beef can be a little bit spicy for the kids so if you don’t love spicy or have sensitive tummies you are thinking of, definitely err on the lower side of the chipotle peppers. Most of the barbacoa beef recipes I have made in the past have required you to blend up a sauce beforehand.
This isn’t a big deal of course but it’s just one more dish to get dirty and I know not everyone has a blender or food processor on available. So we set out to make a barbacoa beef recipe without a blender that anyone could make easily! Our creation Instant Pot Beef Barbacoa Recipe!
It’s delicious served over rice bowls, made into tacos, burritos you name it! The whole family raved about it and I love that it was so easy and fast to whip together.
I hope you make this Instant Pot Beef Barbacoa Recipe for someone you love soon!
