Pomegranate Champagne Margaritas are as delicious as they are head-turning. The perfect easy valentine’s day cocktail!
It’s Valentine’s Day tomorrow and all I can think about are these pomegranate champagne margaritas. They are so dang pretty and go down way too easily!
We will be hanging out tomorrow night at home, what about you?
With 3 boys now including a little snuggly baby it’s hard to sneak away too often for date nights now. We will be putting the kiddos to bed early and cooking dinner in together and sipping these. I’m already getting excited!
I haven’t settled on the menu yet (procrastinate much?!) but I’m settled on red meat and mushrooms. I’m contemplating doing an instant pot shredded beef with mushrooms and pearl onions over some pappardelle noodles…maybe a little red wine mixed into the sauce? Holy yum.

And maybe a sprinkling of pomegranate seeds. Have I mentioned that I’m obsessed with pomegranates?
They have such amazing color and tend to be the perfect garnish. Providing just enough sour and crunchiness to everything. I may get a little carried away with them sometimes but I just cant’ seem to help it.
Have you tried our maple pomegranate ham recipe? It’s HEAVENLY! If you haven’t tried it you seriously should consider having THAT for dinner tomorrow. My older brother is obsessed with that recipe and makes it religiously now for the all the family holiday gatherings.
Now go get ready for Valentine’s Day and happy celebrating!
