I love rice. LOVE rice. I could seriously eat it at every meal. Pork fried rice is a dish that I never ate growing up and that my husband’s family introduced me too. The idea of eating a rice stir fry may have been foreign to me once, but now? It’s a staple “toss all the leftovers together” dish in our house.

Last year I discovered cauliflower rice and everyone in the house loved it, even my husband! It’s such an easy way to swap in more vegetables for carbs, that it is a no brainer for us. But let’s be honest…. keeping dry rice on hand is far easier than always having a whole fresh cauliflower on hand. So, when I found out that Green Giant was now offering a frozen cauliflower rice medley I was so excited! It’s now as easy to keep cauliflower rice on hand as it is to keep regular rice on hand AND it cooks faster! Total mom win right there. 

I was a little nervous to know how it would freeze and if it would be mushy or wetter than the fresh made stuff. I’m SO happy to report that it tastes incredible! No more messy blender or food processor needed to get perfect fluffy cauliflower rice. As if that’s not enough, it already has the peas, carrots, onions and green onions in there. Just hand over the bag and take my money haha!

This recipe comes together super easily. Just sauté the frozen Green Giant® Riced Veggies Cauliflower Medley in one big pan until it is hot. Then add your pork chops and scramble some eggs in the center. Toss and dinner is served!

It’s one of those perfect meals that can be whipped together at the end of a long, busy day when you don’t really feel like cooking!

The kids loved it because it was delicious, and they had no idea that the rice was actually vegetable based. And I love it because it’s real food…there’s no seasonings or fake ingredients, just real cauliflower, green peas, yellow onions, carrots and green onions. It’s hard to argue with that!

Ingredients

  • 2 leftover pork chops diced into bite-size
  • 2 12 oz. bags Green Giant® Riced Veggies Cauliflower Medley
  • 3 eggs
  • 2 tablespoons milk optional
  • Pinch of salt and pepper

Instructions

  • 1. Heat cauliflower medley on medium-high heat in a large sauté pan until heated thoroughly. 2. Add leftover pork chops and cook stirring occasionally until cauliflower begins to get crispy and pork is warm.3. Whisk together eggs, milk and salt, and pepper in a small bowl. Clear a space in the center of the pan and pour eggs in. Scramble the eggs until they are cooked through and combine all of the skillets together.4. Serve with soy sauce and hot sauce if desired. Enjoy!
