These Strawberry Chocolate Mousse Bites are a super fun treat that whip together in no time! Perfect as an appetizer or quick dessert that kids can help with!

Spring is here and that means that we are busy bustling everyone everywhere. Between work, school, playdates and swim lessons we are always on the move. It’s easy for us to get in robot mode and just do all the cooking ourselves and let the kids run amuck when we get home. But sometimes it’s so much fun to just slow down and let the kids whip up their own little treats.

One of the products I remember fondly from my childhood is RITZ Crackers. They were a staple in our household for all kinds of things and mom always had them stashed in the pantry. So it’s no surprise that in our shopping trips to Fred Meyer’s (Kroger for those of you not in our neck of the woods!) that we have to snag some of these. They bring me right back to being a kid again.
You’ve probably gotten bored with how much we profess our undying love for Fred Meyer but it’s true! With ClickList we manage to skip out on going to the grocery stores for huge shops, but I’ve found myself slipping into the store lately just to wander through the produce section again. Everything is so fresh and beautiful! If you don’t live near a Fred Meyer, I suggest you check out one of Kroger’s other banner stores, like Owen’s or Pay Less.

Since it was spring break we got all the cousins together this week and had a super fun time shopping and then ending with a giant snack making party! Cloie had so much fun helping us pick out all kinds of fun toppings to go with our crackers!

We made quite a few different variations, but these strawberry chocolate mousse bites were a total hit!
Start off with making some whipped cream (or use a good store bought whipped cream if you can source one).

Add in some melted semi-sweet chocolate and whisk well to make the mousse.

You can pipe this onto the crackers or just grab a tiny spoon let the kids spoon it onto crackers.

And top with a bit of strawberry (or raspberries are adorable too!) and a mint leaf! P.S. the adorable chubby baby hands kill me every time! So freaking cute.

The kids had so much fun getting to help with these and they made the perfect little snack to go with their tea party. These were so simple and classy that I can definitely see us whipping these up for some of our adult parties too!

Strawberry Chocolate Mousse Bites Recipe
Ingredients
- 2 oz. semi-sweet baking chocolate melted
- 1-1/2 cups whipped cream divided
- 24 RITZ Crackers
- 12 strawberries sliced
- 24 small fresh mint leaves
Instructions
- 1. Whisk chocolate and 1/2 cup whipped cream just until blended. Stir in remaining whipped cream. 2. Spoon into pastry bag fitted with star tip; use to pipe chocolate mixture onto crackers.3. Top with strawberries and mint. Enjoy!
