Healthy Chocolate Crepes

These healthy chocolate crepes are made with whole wheat flour (spelt flour) and honey. They are kid approved and perfect for special occasions!

We absolutely love crepes and I am always a huge fan of anything that can be made in the blender! Add in chocolate to the equation and I knew we had a sure fire winner.

I was so excited to try out Blendtec’s Blender and Wild Side Jar and I was not disappointed. We have been blending up smoothies every morning, soups, my morning coffee drinks and now these awesome crepes!

Start with some cocoa powder.

Add in four eggs.

1 cup of milk.

1/2 cup of flour.
We love spelt flour but all purpose works too!

Honey and a pinch of salt rounds it out.

Give it a whirl for about 20 seconds and you are ready to cook!

We paired our healthy chocolate crepes with some lightly honey sweetened Greek yogurt, strawberries and the lightest dusting of powdered sugar for the perfect special treat!

Campfire Baked Potato Bar

Ingredients

  • 4 medium russet potatoes
  • 4 tbsp salted butter
  • Sea salt
  • fresh cracked black pepper
  • 1 small onion sliced, sliced
  • 1 tbsp minced garlic

Toppings

  • Sour cream
  • Shredded cheese
  • Cooked bacon
  • Diced Red onion
  • Green onion

Instructions

  • Wash potatoes and pat dry.
  • Rub down each potato with butter and thoroughly season with salt and pepper. They will absorb the seasoning so be liberal. You can add additional seasonings like garlic powder, onion powder or dried herbs if desired.
  • Wrap them in foil and cook in coals that are burned down. You do not want the fire to be too hot or the exterior will burn before the center is cooked.
  • Rotate the potatoes every 10 minutes fora total cook time of 30 mins to 1 hour depending on the size of potatoes and temperature of fire.
  • Remove from heat with long tongs and let stand 5- 10 minutes. Open carefully to release the steam.
  • Top with sour cream, shredded cheese, bacon, red onion and green onions.

Notes

If you do not have time to burn down the coals and want them to get started you can also cook them on the cooking grate. Just be sure to rotate them regularly.

  3. the crepes look delicious, I am. always looking for something new and healthy to try on my husband .These would be great for breakfast or for a tasty dessert. I have never made crepes,but your easy to read recipe is beckoning for me to give it a try. Wish me luck!
