Several months ago my husband and I went on an amazing trip to Ireland. We were trudging around on foot through dozens of castles and beautiful countryside. By the end of the afternoon, I was exhausted and hungry.

We spotted a cozy hole in the wall cafe and decided to hop in and grab a bite to eat. I love the restaurants in Ireland because everyone feels like a friend. They are warm and inviting and tuck you into the corner like you are a family. Grandma’s cooking in the back kitchen and the entire family is often there serving in some capacity.

I was feeling a bit under the weather and when I spotted this curry chicken noodle soup I knew it was just the ticket. It was savory and comforting and in minutes I was warm from head to toe.

Ireland is one of the last places I expected to find the most delicious and easy to make curry chicken noodle soup recipe.

You always want to start with the best ingredients. Great tasting chicken stock and fresh organic vegetables, the fresher the better. There are almost no rules when choosing the type of vegetables you want to use for a curry soup.

Curry powder is a savory and sweet blend of spices. It’s a salt-free table seasoning. Used on a variety of foods soups, salads, curries, stews, gravies served over steamed rice. Are the more common uses for the spice. As curry powder becomes more popular it becomes more diverse. Chiefs use curry powder to season hamburgers, scrambled eggs, and potato salad.

Curry Chicken Noodle Soup

  • 1 tbs butter
  • olive oil
  • 6 1/2 cups chicken stock
  • 1 cup shredded chicken or cubed
  • 1 medium white onion chopped
  • 4 celery sticks chopped
  • 4-6 medium carrots chopped
  • 4 tsp yellow curry powder
  • salt and pepper
  • 2 bay leaves
  • ½ bag noodles


  • 1. Combine all ingredients except noodles and allow to simmer 30 min to up to 1 hour.
  • 2. Add noodles and cook until tender.
  • 3. Remove bay leaves.
  • 4. Serve hot with bread. Enjoy!
