Crockpot chili with peanut butter sandwiches? You must think we have officially gone crazy right?

I admit the first time I was given this combination of crockpot chili with peanut butter sandwiches I was more than a little leery of it. I had just given birth to Noah a week earlier and I was absolutely starving all the time. Our friend Levinda brought it over and insisted that it was delicious.
I have a distinct memory of standing in the kitchen in my bathrobe and wolfing down the entire bowl and sandwich as quick as I possibly could, absolutely shocked that the combination worked.
While I didn’t just have a baby last week these past few weeks have been long. And I’m not gonna lie….exhausting.
You see a few months ago I set out to make myself a blog binder to help keep myself organized and motivated. I loved my binder, it was working so well for me and I finally felt like I had things under control and had a place for everything.
If you are new to our blog you might not know that I am a little OCD about certain things. The biggest one?
Systems.
My life runs off of systematizing everything I touch. And when things have no system I basically fall apart.
I am not the cleanest or most organized person in the world by any means, but clutter drives me crazy and I can waste an entire day spinning my wheels accomplishing nothing if I don’t have a plan.
Kevin showed me this the other day and we had a good laugh at my expense…

It’s true though! Only now, I use an app that organizes it all by aisle for me (so handy!).
Alas, one of my worst habits is getting massively over-focused on a single system or idea to the detriment of the rest of my life.
I got so excited about this blogging binder that I started chatting about it with some blogger friends. They all insisted that I must send them a copy of my planner and offer it for sale. So I spent a few weeks and tidied it up and sent it off to a dozen or so of them. The initial planner got rave reviews.
So I have spent every free second I have had over the past few weeks redesigning and updating it for sale. I’m excited to release it soon and get back to regular life again.
Which brings me back to my main point…..I’m tired.
And we had another brew day on the books for this past Saturday which meant lots of people in my little house, tons of cleaning of equipment and usually a BBQ.
But this week we decided that simple was best and we pulled out this easy but adventurous menu.

The chili is so easy and yet it builds up nice and slow to a really wonderful level of heat and spices. We paired it with a couple of different versions of peanut butter sandwiches….PB & honey, PB & banana, and PB & pumpkin butter. Finished off with a giant glass of cold milk and of course a few homebrews and you’ve got the perfect end to a very long couple of weeks!
Crockpot Chili with Peanut Butter Sandwiches
Ingredients
- Chili:
- 1 lb ground beef
- 2 TB Minced garlic
- 3 small onions diced
- 1 Can Kidney Beans
- 2 cans Cannellini Beans
- 1 can Pinto beans
- 1 can Great Northern Beans
- 2 cans diced tomatoes
- 2 cans tomato sauce
- cumin
- black pepper
- mama garlic- sea salt garlic, lemon peel, onion, parsley & black pepper
- cayenne pepper
- Toppings: cheese onions, chives, etc.
- Sandwiches:
- Bread
- Peanut Butter
- Fillings- Honey Bananas, Jam, etc.
Instructions
- 1. Brown ground beef, garlic, and onions in saute pan till beef is cooked through. Onions do not need to be cooked completely through, they will soften in chili further.
2. Add meat mixture, beans and tomatoes to 6-quart crockpot.
3. Season liberally with cumin, pepper, mama garlic (or comparable seasoning mix).
4. Adjust heat to taste with cayenne, heat will intensify over time so start with less than you think it needs.
5. Cook on low for 3-6 hours.
6. Holds well on warm.
7. Assemble peanut butter sandwiches and serve with chili and milk.
