This skillet chicken and dumplings is the perfect way to make your favorite dish into an easy real food weeknight staple. From scratch dumplings with just 4 ingredients too!

Weeknights here are always a bit of a blur with the kids and all our activities. We do try our best to make dinner a priority here though which means we need meals that we can take from concept to the table in less than an hour at most. The last thing I need is a hungry toddler fight happening while I am fixing a gourmet 3 course dinner.

But I still love a delicious meal and nothing to me says comfort food like chicken and dumplings. I don’t have any memories of this dish from growing up, but when Kevin and I were moving across the country a few years back we made a very long trek from Oregon to Georgia. We were crammed into a tiny Subaru with our Australian shepherd. After several days of adventures, we had decided it was time to just get there. We spent two days driving hard to make it to Georgia and came into a very unseasonal ½ inch of snow falling as we arrived.

We were wet and tired, and as we walked into our friends home they greeted us with a huge welcoming dinner of chicken and dumplings. It was just what we needed. I set out after that determined to make a delicious dumpling soup and this is that recipe.

When Anolon approached us about developing a recipe for them I knew that a skillet chicken and dumplings would be a perfect challenge. Taking all our flavor from the classic recipe, and speeding it up even more in a skillet dinner.

A quick saute in the skillet turns our veggies tender and everything simmers together to create a delicious easy chicken and dumplings. Finally, just 4 simple ingredients: flour, baking powder, salt and buttermilk (or half and half in a pinch) come together to make the dumplings. A few minutes bubbling with the glass lid on and our soup is finished!

Ingredients

  • 3 containers 32 oz. low-sodium chicken stock
  • 2 medium onions diced
  • 4 carrots peeled, sliced into 1 inch rounds
  • 1 head broccoli chopped
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2-3 cups leftover chopped chicken
  • 2 bay leaves
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme or a few fresh sprigs
  • 1 teaspoon powdered garlic or add in a few fresh cloves
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup half and half
  • 2 tablespoons cornstarch
  • For Dumplings:
  • 1 1/2 cups flour whole wheat or all-purpose
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk or half and half
  • To Serve:
  • grated Parmesan cheese
  • fresh black pepper
