How to make camping breakfast burritos?
In a large cast-iron pan, cook the sausage until cooked thoroughly and set aside. Then add in the diced potatoes to the sausage grease.
If you have another pan you can scramble the eggs separately to save time or wait until the potatoes are nice and crispy and simply pour the whisked eggs over everything. Once everything is cooked thoroughly add shredded cheese and allow it to melt.
Spoon the sausage, potato and egg mixture onto center of each tortilla. Tuck the short ends of the tortilla in and roll to close it up. and wrap in some heavy-duty foil.
Serve immediately or add to plastic zipper bag or portable container until cooking time. These breakfast burritos are not only easy to make but can be made ahead of time for a quick meal around the fire.
How to freeze breakfast burritos?
The freeze option means making these amazing camping breakfast burritos ahead of time for storage in the freezer. The first difference is that you allow the filling to cool before making your burritos. Mix all ingredients together, wrap the burrito tightly in the aluminum foil and repeat the process by filling and folding the remaining burritos. Freeze the burritos in a single layer on a baking sheet, they’ll freeze faster and more uniformly this way. Store the frozen burritos in a gallon-sized zip-loc freezer bag for longer-term storage.

Camping Breakfast Burritos
Ingredients
- 4 large flour tortillas
- 4 large potatoes
- 1 lb sausage
- 8 eggs
- 1-1 1/2 cups grated cheddar cheese
- 1/2 tsp salt
- 1/4 tsp pepper
Toppings
- green onions , sliced
- salsa or hot sauce
- Sour cream
- Cilantro
Instructions
- In a large skillet, cook sausage until browned (8–10 minutes). Remove and set aside.
- Add potatoes to the grease and fry until golden and crisp (10–12 minutes). Add extra oil if needed to prevent sticking. Season with salt and pepper.
- Whisk eggs with salt and pepper, pour over potatoes and scramble until set (4–6 minutes).
- Mix sausage back in and top with cheese.
- Lay out a piece of foil for each tortilla and place tortillas on top.
- Evenly divide the filling ingredients between tortillas.
- Fold the short end of the tortillas in and then roll burritos up and wrap in foil. Serve hot with toppings.
- If prepping before you leave to camp, store in a plastic zippered bag or airtight plastic container.When ready to eat, place burritos on the fireplace grate and cook in indirect heat for 10-15 mins turning regularly. Cook until warmed and cheese is melted.If you are feeling fancy, you can pan fry them in a non stick skillet with a bit of oil (after warming), for an extra crispy exterior.

Yes you could cook up hash browns and stuff those inside no problem. Cook them extra crispy to help them hold up best.

Hey Amy! You can cook from frozen or thaw them. I do like the add a paper towel around each one when I freeze them if I plan to thaw them. It helps them not get soggy. Hope that helps! ~Dani
Prior to freezing, you wrap the burrito in a paper towel first, then foil? Pull out to thaw, do you just put on campfire w the paper towel inside the foil?
That is how we do it yes 🙂 You can also spray the tin foil if you prefer that, the paper towel just helps it not stick more than anything.
